I can do pretty much any kind of editing a client needs, but it's very important that everyone have the same expectations about what kind of editing work will actually be done, as it will impact not only what happens to the document but how long it takes and what the process costs.
So, here are my own definitions of several types of editing, from simplest to most complex:
